Ingredients

  • 500g boneless, skinless chicken thighs, diced
  • 2 cups cabbage, sliced
  • 1 cup sweet potato, thinly sliced
  • 1 cup rice cakes
  • 1 cup scallions, cut into 2-inch pieces
  • 1 cup sweet potato noodles, soaked in water
  • 1/2 cup Korean chili paste (gochujang)
  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon sesame oil
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix together the Korean chili paste, soy sauce, sugar, garlic, and sesame oil to make the marinade.
  2. Add the diced chicken to the marinade and let it sit for 10-15 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the marinated chicken and cook until it is almost cooked through.
  5. Add the cabbage, sweet potato, rice cakes, and scallions to the skillet and stir-fry for 5-7 minutes.
  6. Add the sweet potato noodles and continue to stir-fry for another 3-4 minutes.
  7. Sprinkle with sesame seeds and serve hot.
