Ingredients

  • 1 cup rice
  • 1 cup black-eyed peas
  • 1 lb lamb, cut into chunks
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1 scotch bonnet pepper, chopped
  • 1/4 cup tomato paste
  • 2 tbsp vegetable oil
  • 4 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the lamb chunks and brown on all sides.
  3. Add the chopped onion, garlic, and scotch bonnet pepper. Cook until the onion is translucent.
  4. Stir in the tomato paste and cook for 2 minutes.
  5. Add the diced tomatoes, carrots, black-eyed peas, and rice to the pot.
  6. Pour in the water and season with salt and pepper.
  7. Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes, or until the rice and peas are tender.
  8. Serve hot and enjoy!
