Dakar Delicacy (Thiébou Nébé Yapp)
Thiébou Nébé Yapp is a traditional Senegalese dish that combines rice, black-eyed peas, and lamb to create a flavorful and hearty meal.
Ingredients
- 1 cup rice
- 1 cup black-eyed peas
- 1 lb lamb, cut into chunks
- 1 onion, chopped
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 garlic cloves, minced
- 1 scotch bonnet pepper, chopped
- 1/4 cup tomato paste
- 2 tbsp vegetable oil
- 4 cups water
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the lamb chunks and brown on all sides.
- Add the chopped onion, garlic, and scotch bonnet pepper. Cook until the onion is translucent.
- Stir in the tomato paste and cook for 2 minutes.
- Add the diced tomatoes, carrots, black-eyed peas, and rice to the pot.
- Pour in the water and season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes, or until the rice and peas are tender.
- Serve hot and enjoy!
