Ingredients
- 1 lb fish fillets, such as tilapia or cod
- 1 cup creamy peanut butter
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 cup tomato sauce
- 3 cups fish or vegetable broth
- 1/2 cup chopped carrots
- 1/2 cup chopped bell peppers
- 1/2 cup chopped cabbage
- 1/2 cup chopped spinach
- 1/4 cup vegetable oil
- 2 cloves garlic, minced
- 1 tsp ground cayenne pepper
- Salt and pepper to taste
Instructions
- Season the fish fillets with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the diced tomatoes, tomato sauce, and peanut butter to the pot. Stir well to combine and cook for 5 minutes.
- Pour in the fish or vegetable broth and stir to incorporate the peanut mixture. Bring to a gentle simmer.
- Gently add the seasoned fish fillets to the pot, making sure they are submerged in the sauce. Cook for 15 minutes, or until the fish is cooked through.
- Add the chopped carrots, bell peppers, cabbage, and spinach to the pot. Simmer for an additional 10 minutes, or until the vegetables are tender.
- Adjust the seasoning with salt, pepper, and cayenne pepper to taste.
- Serve the Mafé Poisson hot with rice or crusty bread.
