Dakar Delight (Mafé)
Mafé, also known as groundnut stew, is a popular dish in Senegalese cuisine. This hearty and flavorful stew is made with a rich peanut sauce and tender chunks of meat, and it's often served with rice or couscous. Ingredients
- 2 lbs beef or chicken, cut into chunks
- 1 cup peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 1 cup tomato paste
- 4 cups beef or chicken broth
- 1 sweet potato, peeled and diced
- 1 cup chopped okra
- 1 scotch bonnet pepper, whole
- Salt and pepper to taste
Instructions
- In a large pot, brown the meat over medium heat.
- Add the onion and tomatoes, and cook until the onions are translucent.
- Stir in the tomato paste and peanut butter until well combined.
- Pour in the broth and add the sweet potato, okra, and scotch bonnet pepper.
- Season with salt and pepper, then cover and simmer for 45 minutes to 1 hour, or until the meat is tender and the sauce has thickened.
- Remove the scotch bonnet pepper before serving.
