Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups rice
  • 1 large onion, chopped
  • 3 tomatoes, diced
  • 1 eggplant, sliced
  • 2 carrots, sliced
  • 1/2 cup tomato paste
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1 scotch bonnet pepper, whole
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. Stir in the diced tomatoes, tomato paste, thyme, black pepper, and salt. Cook for 5 minutes, stirring occasionally.
  4. Pour in the water and add the whole scotch bonnet pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  5. Add the sliced eggplant and carrots to the pot. Continue to simmer for an additional 20 minutes, or until the lamb is tender and the vegetables are cooked through.
  6. While the stew is simmering, rinse the rice and cook according to package instructions.
  7. Serve the Thiébou Dieune Lamb over the cooked rice and enjoy!
