Dakar Delight (Thiébou Dieune Lamb)

Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups rice
- 1 large onion, chopped
- 3 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, sliced
- 1/2 cup tomato paste
- 4 cups water
- 1/4 cup vegetable oil
- 1 scotch bonnet pepper, whole
- 1/2 tsp thyme
- 1/2 tsp black pepper
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the diced tomatoes, tomato paste, thyme, black pepper, and salt. Cook for 5 minutes, stirring occasionally.
- Pour in the water and add the whole scotch bonnet pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
- Add the sliced eggplant and carrots to the pot. Continue to simmer for an additional 20 minutes, or until the lamb is tender and the vegetables are cooked through.
- While the stew is simmering, rinse the rice and cook according to package instructions.
- Serve the Thiébou Dieune Lamb over the cooked rice and enjoy!
