Dakar Discovery (Thiébou Djolof Tiga)
Thiébou Djolof Tiga (Dakar Discovery) is a traditional Senegalese dish that features flavorful fish and rice cooked in a tomato-based sauce. This recipe is a delightful introduction to the vibrant and diverse cuisine of Senegal.
Ingredients
- 2 lbs fish fillets
- 2 cups rice
- 1 onion, chopped
- 3 tomatoes, diced
- 1/4 cup tomato paste
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 1/4 cup vegetable oil
- 1/2 tsp ground red pepper
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1 bay leaf
- Salt to taste
- 4 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced tomatoes, tomato paste, scotch bonnet pepper, ground red pepper, thyme, black pepper, and bay leaf to the pot. Stir well to combine.
- Add the fish fillets to the pot and cook for 5 minutes, turning once to ensure even cooking.
- Add the water to the pot and bring to a boil. Once boiling, add the rice and stir gently to combine with the sauce and fish.
- Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the rice is tender and the fish is cooked through.
- Remove the scotch bonnet pepper and bay leaf from the pot before serving.
