Dakar Discovery (Thiébou Djolof Tiga)

Ingredients

  • 2 lbs fish fillets
  • 2 cups rice
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 1/4 cup tomato paste
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, whole
  • 1/4 cup vegetable oil
  • 1/2 tsp ground red pepper
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1 bay leaf
  • Salt to taste
  • 4 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Add the diced tomatoes, tomato paste, scotch bonnet pepper, ground red pepper, thyme, black pepper, and bay leaf to the pot. Stir well to combine.
  3. Add the fish fillets to the pot and cook for 5 minutes, turning once to ensure even cooking.
  4. Add the water to the pot and bring to a boil. Once boiling, add the rice and stir gently to combine with the sauce and fish.
  5. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the rice is tender and the fish is cooked through.
  6. Remove the scotch bonnet pepper and bay leaf from the pot before serving.
