Dakar's Delight (Thiébou Nébé Lamb)
Thiébou Nébé Lamb, also known as Dakar's Delight, is a traditional Senegalese dish that features lamb, rice, and black-eyed peas in a flavorful tomato-based sauce. This hearty and aromatic dish is a staple in Senegalese cuisine and is perfect for sharing with family and friends.
Ingredients
- 1 lb lamb, cut into pieces
- 1 cup black-eyed peas, soaked overnight
- 2 cups rice
- 1 onion, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 scotch bonnet pepper, whole
- 1/4 cup tomato paste
- 1/4 cup vegetable oil
- 1 tsp thyme
- 1 tsp ground ginger
- 1 tsp ground allspice
- 4 cups water
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb pieces and brown on all sides.
- Add the chopped onion, diced tomatoes, minced garlic, thyme, ground ginger, and ground allspice to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the tomato paste and cook for another 2 minutes.
- Add the soaked black-eyed peas, whole scotch bonnet pepper, and water to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Stir in the rice and season with salt and pepper. Cover the pot and cook for an additional 20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove the scotch bonnet pepper before serving.
