Dakgalbi Spicy Stir-Fried Chicken (닭갈비)

Ingredients
- 500g boneless, skinless chicken thighs, cut into bite-sized pieces
- 200g sweet potato, thinly sliced
- 150g cabbage, chopped
- 100g Korean rice cakes (tteok)
- 1 small onion, sliced
- 2 green onions, cut into 2-inch pieces
- 4 tbsp Korean red chili paste (gochujang)
- 2 tbsp soy sauce
- 2 tbsp rice wine (mirin)
- 1 tbsp sugar
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- 1 tsp minced garlic
- 1/2 tsp black pepper
Instructions
- In a large bowl, combine the chicken, Korean red chili paste, soy sauce, rice wine, sugar, minced garlic, and black pepper. Mix well and let it marinate for 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 5-6 minutes until the chicken is almost cooked through.
- Add the sweet potato, cabbage, onion, and rice cakes to the skillet. Stir-fry for an additional 5 minutes until the vegetables are tender and the chicken is fully cooked.
- Add the green onions and sesame oil to the skillet. Stir-fry for 1-2 minutes until everything is well combined and heated through.
- Transfer the dakgalbi to a serving platter and serve hot.
