Ingredients

  • 500g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 200g sweet potato, thinly sliced
  • 150g cabbage, chopped
  • 100g Korean rice cakes (tteok)
  • 1 small onion, sliced
  • 2 green onions, cut into 2-inch pieces
  • 4 tbsp Korean red chili paste (gochujang)
  • 2 tbsp soy sauce
  • 2 tbsp rice wine (mirin)
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 1 tsp minced garlic
  • 1/2 tsp black pepper

Instructions

  1. In a large bowl, combine the chicken, Korean red chili paste, soy sauce, rice wine, sugar, minced garlic, and black pepper. Mix well and let it marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for 5-6 minutes until the chicken is almost cooked through.
  3. Add the sweet potato, cabbage, onion, and rice cakes to the skillet. Stir-fry for an additional 5 minutes until the vegetables are tender and the chicken is fully cooked.
  4. Add the green onions and sesame oil to the skillet. Stir-fry for 1-2 minutes until everything is well combined and heated through.
  5. Transfer the dakgalbi to a serving platter and serve hot.
