Dakgalbi Tacos (닭갈비)

Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup gochujang (Korean red chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 onion, sliced
  • 1 sweet potato, thinly sliced
  • 2 cups cabbage, chopped
  • 8 small flour tortillas
  • 1/4 cup chopped green onions, for garnish

Instructions

  1. In a bowl, mix the gochujang, soy sauce, sugar, and sesame oil to make the marinade.
  2. Add the chicken pieces to the marinade and let it sit for 10 minutes.
  3. Heat a large skillet over medium heat and add the marinated chicken, onion, sweet potato, and cabbage. Cook until the chicken is fully cooked and the vegetables are tender.
  4. Warm the tortillas in a separate skillet or in the oven.
  5. Assemble the tacos by placing the cooked Dakgalbi mixture onto the warm tortillas. Garnish with chopped green onions.
