Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, sliced
  • 3-4 potatoes, peeled and cut into chunks
  • 4 carrots, sliced
  • 5-6 shiitake mushrooms, sliced
  • 1 cup soy sauce
  • ½ cup sugar
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups water
  • Sesame seeds and green onions for garnish

Instructions

  1. Place the chicken pieces in a large pot.
  2. Add the onion, potatoes, carrots, and shiitake mushrooms to the pot.
  3. In a bowl, mix together the soy sauce, sugar, garlic, and ginger. Pour the mixture over the chicken and vegetables.
  4. Add water to the pot, making sure the chicken and vegetables are submerged.
  5. Cover the pot and bring it to a boil over medium heat. Then, reduce the heat and let it simmer for about 1 hour, or until the chicken is tender.
  6. Garnish with sesame seeds and green onions before serving.
