Ingredients
- 4 large ripe tomatoes, diced
- 1 small red onion, finely chopped
- 1/4 cup extra virgin olive oil

- 8 Kalamata olives, pitted and chopped
- 8 small barley rusks or whole grain rusks
- Salt and pepper to taste
Instructions
- In a large bowl, mix the diced tomatoes, chopped red onion, and extra virgin olive oil. Season with salt and pepper to taste.
- Place the barley rusks on a serving platter.
- Spoon the tomato mixture over the rusks, dividing it evenly among them.
- Sprinkle the crumbled feta cheese over the tomato mixture on each rusk.
- Garnish with chopped Kalamata olives.
