Ingredients

  • 4 large ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/2 cup crumbled feta cheese
  • 8 Kalamata olives, pitted and chopped
  • 8 small barley rusks or whole grain rusks
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the diced tomatoes, chopped red onion, and extra virgin olive oil. Season with salt and pepper to taste.
  2. Place the barley rusks on a serving platter.
  3. Spoon the tomato mixture over the rusks, dividing it evenly among them.
  4. Sprinkle the crumbled feta cheese over the tomato mixture on each rusk.
  5. Garnish with chopped Kalamata olives.
  6. Serve immediately and enjoy!
