Ingredients

  • 8 large mushrooms, stems removed and reserved
  • 1/2 cup yellow lentils, rinsed and drained
  • 2 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

  1. In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Add the cumin seeds, coriander powder, turmeric powder, and red chili powder. Stir well and cook for 2 minutes.
  3. Add the chopped spinach and cook until wilted. Remove from heat and let the mixture cool.
  4. In a separate pan, heat the remaining oil and add the lentils. Cook for 5 minutes, then add 1 cup of water and salt. Cook until the lentils are soft and the water is absorbed.
  5. Add the cooked lentils to the spinach mixture and mix well. This is the stuffing for the mushrooms.
  6. Preheat the oven to 375°F (190°C). Stuff the mushroom caps with the lentil and spinach mixture, and place them on a baking sheet.
  7. Bake for 15-20 minutes, or until the mushrooms are tender.
  8. Garnish with fresh cilantro and serve hot.
