Dal Palak Bharwa Khumb (lentil And Spinach Stuffed Mushrooms)
Dal Palak Bharwa Khumb is a delicious and nutritious dish from East Indian cuisine. It features mushrooms stuffed with a flavorful mixture of lentils and spinach, making it a perfect appetizer or side dish.
Ingredients
- 8 large mushrooms, stems removed and reserved
- 1/2 cup yellow lentils, rinsed and drained
- 2 cups fresh spinach, chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the cumin seeds, coriander powder, turmeric powder, and red chili powder. Stir well and cook for 2 minutes.
- Add the chopped spinach and cook until wilted. Remove from heat and let the mixture cool.
- In a separate pan, heat the remaining oil and add the lentils. Cook for 5 minutes, then add 1 cup of water and salt. Cook until the lentils are soft and the water is absorbed.
- Add the cooked lentils to the spinach mixture and mix well. This is the stuffing for the mushrooms.
- Preheat the oven to 375°F (190°C). Stuff the mushroom caps with the lentil and spinach mixture, and place them on a baking sheet.
- Bake for 15-20 minutes, or until the mushrooms are tender.
- Garnish with fresh cilantro and serve hot.
