Ingredients

  • 1 cup red lentils
  • 2 cups chopped spinach
  • 4 medium zucchinis
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • 1 tablespoon lemon juice
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils and cook them in a pot with 2 cups of water until soft. Drain any excess water and set aside.
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center for stuffing.
  3. Heat 1 tablespoon of oil in a pan and add cumin seeds. Once they splutter, add the minced garlic and chopped onion. Sauté until the onion is translucent.
  4. Add the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes are soft and the mixture thickens.
  5. Stir in the chopped spinach and cooked lentils. Cook for a few minutes, then add garam masala and lemon juice. Mix well and remove from heat.
  6. Stuff the zucchini halves with the lentil and spinach mixture.
  7. Heat the remaining oil in a pan and place the stuffed zucchinis. Cover and cook on low heat for 15-20 minutes, or until the zucchinis are tender.
  8. Garnish with fresh cilantro before serving.
