Ingredients
- 1 cup red lentils
- 2 cups chopped spinach
- 4 medium zucchinis
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- 1 tablespoon lemon juice
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils and cook them in a pot with 2 cups of water until soft. Drain any excess water and set aside.
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center for stuffing.
- Heat 1 tablespoon of oil in a pan and add cumin seeds. Once they splutter, add the minced garlic and chopped onion. Sauté until the onion is translucent.
- Add the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes are soft and the mixture thickens.
- Stir in the chopped spinach and cooked lentils. Cook for a few minutes, then add garam masala and lemon juice. Mix well and remove from heat.
- Stuff the zucchini halves with the lentil and spinach mixture.
- Heat the remaining oil in a pan and place the stuffed zucchinis. Cover and cook on low heat for 15-20 minutes, or until the zucchinis are tender.
- Garnish with fresh cilantro before serving.
