Ingredients

  • 1 cup yellow lentils
  • 2 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 2 cups water

Instructions

  1. Rinse the lentils and soak them in water for 30 minutes.
  2. Heat oil in a large pot or pressure cooker. Add cumin seeds and let them splutter.
  3. Add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
  4. Add diced tomatoes and cook until they turn soft.
  5. Stir in the turmeric, coriander, red chili powder, and salt. Cook for 2 minutes.
  6. Add the soaked lentils and water. Cover and cook until the lentils are soft and fully cooked.
  7. Add chopped spinach and garam masala. Cook for an additional 5 minutes.
  8. Adjust the seasoning and consistency of the curry as per your preference.
  9. Serve hot with steamed rice or naan bread.
