Dal Palak Curry is a classic East Indian dish that combines lentils and spinach in a flavorful and nutritious curry. This dish is packed with protein, fiber, and essential vitamins, making it a wholesome and satisfying meal.
Ingredients
- 1 cup yellow lentils
- 2 cups fresh spinach, chopped
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 2 cups water
Instructions
- Rinse the lentils and soak them in water for 30 minutes.
- Heat oil in a large pot or pressure cooker. Add cumin seeds and let them splutter.
- Add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
- Add diced tomatoes and cook until they turn soft.
- Stir in the turmeric, coriander, red chili powder, and salt. Cook for 2 minutes.
- Add the soaked lentils and water. Cover and cook until the lentils are soft and fully cooked.
- Add chopped spinach and garam masala. Cook for an additional 5 minutes.
- Adjust the seasoning and consistency of the curry as per your preference.
- Serve hot with steamed rice or naan bread.
