Dal Sabzi Biryani (lentil And Vegetable Biryani)
Dal Sabzi Biryani is a flavorful and aromatic rice dish from East Indian cuisine, combining lentils, vegetables, and fragrant spices. This vegetarian biryani is a perfect balance of protein, fiber, and essential nutrients, making it a wholesome and satisfying meal.
Ingredients
- 1 cup basmati rice, soaked for 30 minutes and drained
- 1/2 cup mixed lentils (masoor dal, moong dal, or toor dal)
- 2 tablespoons ghee or oil
- 1 onion, thinly sliced
- 1 green chili, slit
- 1 teaspoon ginger-garlic paste
- 1 cup mixed vegetables (carrots, peas, beans, cauliflower)
- 1 tomato, chopped
- 1 teaspoon biryani masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 2 cups water
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- In a large pot, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.
- Add the sliced onion and green chili. Sauté until the onions turn golden brown.
- Stir in the ginger-garlic paste and cook for a minute.
- Add the mixed vegetables and sauté for 3-4 minutes.
- Now, add the chopped tomato, biryani masala, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the spices are fragrant.
- Stir in the mixed lentils and soaked rice. Mix well to coat the rice and lentils with the spices.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice and lentils are cooked through.
- Garnish with fresh cilantro leaves before serving.
