Dal Shorba (creamy Lentil Soup)

Ingredients

  • 1 cup red lentils
  • 4 cups water
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 cup heavy cream
  • Salt to taste
  • 2 tablespoons ghee (clarified butter)

Instructions

  1. Rinse the lentils and place them in a pot with water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. In a separate pan, heat ghee and add cumin seeds. Once they splutter, add onions, garlic, and ginger. Sauté until onions are golden brown.
  3. Add tomatoes, turmeric, coriander, and red chili powder. Cook until the tomatoes are soft.
  4. Add the cooked lentils to the tomato mixture and simmer for 10 minutes.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  6. Return the soup to the pot, stir in the heavy cream, and season with salt. Simmer for another 5 minutes.
  7. Serve hot, garnished with a drizzle of cream and a sprinkle of fresh coriander leaves.
