Ingredients
- 500g mixed seafood (such as fish, shrimp, and mussels)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 1 potato, diced
- 1 liter fish or seafood broth
- 1/2 cup white wine
- 1 bay leaf
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the diced tomatoes, sliced bell pepper, and diced potato to the pot. Cook for a few minutes until the vegetables start to soften.
- Pour in the fish or seafood broth and white wine. Add the bay leaf, dried oregano, and season with salt and pepper. Bring the stew to a simmer.
- Add the mixed seafood to the pot and cook for about 5-7 minutes, or until the seafood is cooked through.
- Remove the pot from the heat and discard the bay leaf. Serve the Dalmatian Seafood Stew hot, garnished with fresh parsley.
