Ingredients

  • 500g mixed seafood (such as fish, shrimp, and mussels)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 1 potato, diced
  • 1 liter fish or seafood broth
  • 1/2 cup white wine
  • 1 bay leaf
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the diced tomatoes, sliced bell pepper, and diced potato to the pot. Cook for a few minutes until the vegetables start to soften.
  3. Pour in the fish or seafood broth and white wine. Add the bay leaf, dried oregano, and season with salt and pepper. Bring the stew to a simmer.
  4. Add the mixed seafood to the pot and cook for about 5-7 minutes, or until the seafood is cooked through.
  5. Remove the pot from the heat and discard the bay leaf. Serve the Dalmatian Seafood Stew hot, garnished with fresh parsley.
