Dalor Mangxo (assamese Style Lentil Curry)

Ingredients

  • 1 cup masoor dal (red lentils)
  • 2 cups water
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 green chili, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the masoor dal and soak it in water for 10 minutes.
  2. In a pressure cooker, add the soaked dal, water, turmeric powder, and salt. Pressure cook for 3-4 whistles or until the dal is soft and mushy.
  3. In a separate pan, heat mustard oil and add cumin seeds. Once the seeds splutter, add the chopped onion and green chili. Sauté until the onions are golden brown.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.
  5. Add the cooked dal to the pan and mix well. Adjust the consistency by adding water if needed.
  6. Simmer the dal for 5-7 minutes, allowing the flavors to blend together.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice.
