Dalor Mangxo (assamese Style Lentil Curry)
Dalor Mangxo is a traditional Assamese style lentil curry that is packed with flavors and nutrition. This hearty and comforting dish is perfect for a cozy meal at home.
Ingredients
- 1 cup masoor dal (red lentils)
- 2 cups water
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 green chili, chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the masoor dal and soak it in water for 10 minutes.
- In a pressure cooker, add the soaked dal, water, turmeric powder, and salt. Pressure cook for 3-4 whistles or until the dal is soft and mushy.
- In a separate pan, heat mustard oil and add cumin seeds. Once the seeds splutter, add the chopped onion and green chili. Sauté until the onions are golden brown.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add the cooked dal to the pan and mix well. Adjust the consistency by adding water if needed.
- Simmer the dal for 5-7 minutes, allowing the flavors to blend together.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
