Dalor Xaak Mangxo (assamese Style Lentil Curry With Spinach)
Dalor Xaak Mangxo is a traditional Assamese dish that combines the goodness of lentils with the nutritional benefits of spinach. This flavorful and hearty lentil curry is a staple in Assamese cuisine and is enjoyed with steamed rice.
Ingredients
- 1 cup split red lentils
- 2 cups water
- 1 bunch fresh spinach, washed and chopped
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 3-4 garlic cloves, minced
- 1-inch ginger, grated
- 1 green chili, chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard oil
- Salt to taste
Instructions
- Rinse the lentils under running water and drain.
- In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until the lentils are soft.
- Add the chopped spinach to the pot and cook for an additional 5 minutes.
- In a separate pan, heat the mustard oil. Add the cumin seeds and let them splutter.
- Add the chopped onions, garlic, ginger, and green chili. Sauté until the onions are golden brown.
- Add the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes are soft and the oil separates from the mixture.
- Pour the tomato mixture into the pot of cooked lentils and spinach. Stir well and simmer for 5-7 minutes.
- Adjust the seasoning and serve hot with steamed rice.
