Dalor Xaak Mangxo (assamese Style Lentil Curry With Spinach)

Ingredients

  • 1 cup split red lentils
  • 2 cups water
  • 1 bunch fresh spinach, washed and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3-4 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 green chili, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard oil
  • Salt to taste

Instructions

  1. Rinse the lentils under running water and drain.
  2. In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until the lentils are soft.
  3. Add the chopped spinach to the pot and cook for an additional 5 minutes.
  4. In a separate pan, heat the mustard oil. Add the cumin seeds and let them splutter.
  5. Add the chopped onions, garlic, ginger, and green chili. Sauté until the onions are golden brown.
  6. Add the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes are soft and the oil separates from the mixture.
  7. Pour the tomato mixture into the pot of cooked lentils and spinach. Stir well and simmer for 5-7 minutes.
  8. Adjust the seasoning and serve hot with steamed rice.
