Ingredients
- 12 spring roll wrappers
- 1 cup Dambu Nama (Nigerian dried shredded beef)
- 1 cup shredded cabbage
- 1 medium carrot, julienned
- 1/2 cup sliced bell peppers
- 2 tablespoons soy sauce
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 tablespoon vegetable oil
- 1 egg, beaten (for sealing the spring rolls)
Instructions
- In a pan, heat the vegetable oil over medium heat. Add the minced ginger and garlic, and sauté for 1 minute.
- Add the Dambu Nama and stir-fry for 3-4 minutes until it's slightly crispy.
- Add the shredded cabbage, julienned carrot, and sliced bell peppers. Stir-fry for another 2-3 minutes.
- Drizzle the soy sauce over the filling mixture and toss to combine. Remove from heat and let it cool.
- Place a spring roll wrapper on a clean surface. Spoon 2-3 tablespoons of the filling onto the bottom third of the wrapper.
- Roll the wrapper over the filling, tuck in the sides, and continue rolling into a tight cylinder. Seal the edge with the beaten egg.
- Repeat with the remaining wrappers and filling.
- In a deep pan, heat oil for frying over medium heat. Fry the spring rolls in batches for 3-4 minutes until golden brown and crispy.
- Remove and drain on paper towels.
- Serve the Dambu Nama spring rolls hot with your favorite dipping sauce.
