Ingredients
- 3 cups cooked rice
- 3 eggs, beaten
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the beaten eggs and scramble until just set. Remove from the skillet and set aside.
- Heat the remaining vegetable oil in the same skillet. Add the diced carrots and cook for 2-3 minutes.
- Add the cooked rice and frozen peas to the skillet. Stir-fry for 3-4 minutes.
- Return the scrambled eggs to the skillet and mix well with the rice and vegetables.
- Season the fried rice with soy sauce, salt, and black pepper. Stir well to combine.
- Cook for an additional 2-3 minutes, stirring constantly, until the rice is heated through.
- Remove from heat and serve hot.
