Ingredients

  • 3 cups cooked rice
  • 3 eggs, beaten
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add the beaten eggs and scramble until just set. Remove from the skillet and set aside.
  3. Heat the remaining vegetable oil in the same skillet. Add the diced carrots and cook for 2-3 minutes.
  4. Add the cooked rice and frozen peas to the skillet. Stir-fry for 3-4 minutes.
  5. Return the scrambled eggs to the skillet and mix well with the rice and vegetables.
  6. Season the fried rice with soy sauce, salt, and black pepper. Stir well to combine.
  7. Cook for an additional 2-3 minutes, stirring constantly, until the rice is heated through.
  8. Remove from heat and serve hot.
