Danish Apple Pancakes (Æbleskiver)

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 large eggs, separated
  • 2 cups buttermilk
  • 2 tablespoons unsalted butter, melted
  • 2 apples, peeled, cored, and diced
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the egg whites until stiff peaks form.
  3. In another bowl, whisk together the egg yolks, buttermilk, and melted butter.
  4. Gently fold the egg whites into the buttermilk mixture.
  5. Heat an æbleskiver pan over medium heat and lightly grease the indentations with butter.
  6. Pour the batter into the indentations, filling each about halfway.
  7. Place a few pieces of diced apple into the center of each pancake.
  8. Cook for 2-3 minutes or until the bottoms are golden brown, then carefully flip each pancake using a skewer or fork.
  9. Cook for an additional 2-3 minutes until the other side is golden brown and the pancakes are cooked through.
  10. Transfer the cooked pancakes to a plate and dust with powdered sugar before serving.
