Danish Apple Pancakes (Æbleskiver)
Æbleskiver, also known as Danish apple pancakes, are a traditional Danish treat enjoyed during the holiday season. These fluffy, round pancakes are filled with small pieces of apple and are perfect for a cozy breakfast or dessert.
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar
- 2 large eggs, separated
- 2 cups buttermilk
- 2 tablespoons unsalted butter, melted
- 2 apples, peeled, cored, and diced
- Powdered sugar, for dusting
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg whites until stiff peaks form.
- In another bowl, whisk together the egg yolks, buttermilk, and melted butter.
- Gently fold the egg whites into the buttermilk mixture.
- Heat an æbleskiver pan over medium heat and lightly grease the indentations with butter.
- Pour the batter into the indentations, filling each about halfway.
- Place a few pieces of diced apple into the center of each pancake.
- Cook for 2-3 minutes or until the bottoms are golden brown, then carefully flip each pancake using a skewer or fork.
- Cook for an additional 2-3 minutes until the other side is golden brown and the pancakes are cooked through.
- Transfer the cooked pancakes to a plate and dust with powdered sugar before serving.
