Danish Blueberry Danish (Blåbærsnitter)

Ingredients

  • 2 sheets of puff pastry
  • 1 cup blueberries
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 egg, beaten
  • 1 cup powdered sugar
  • 2-3 tablespoons milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine the blueberries, sugar, and cornstarch. Cook over medium heat until the mixture thickens, then remove from heat and let it cool.
  3. Roll out the puff pastry sheets and cut each into 4 equal rectangles.
  4. Place a spoonful of the blueberry filling onto half of the pastry rectangles, then cover with the remaining rectangles. Press the edges to seal.
  5. Brush the pastries with the beaten egg and bake for 15 minutes or until golden brown.
  6. In a small bowl, mix the powdered sugar and milk to make a glaze. Drizzle the glaze over the cooled pastries.
