Ingredients
- 4 cups fresh blueberries
- 1/2 cup sugar
- 2 cups water
- 1 cinnamon stick
- 1 tablespoon lemon juice
- 1/4 cup cornstarch
- 1/4 cup cold water
Instructions
- In a large pot, combine the blueberries, sugar, 2 cups of water, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 10 minutes.
- In a small bowl, mix the cornstarch and 1/4 cup of cold water until smooth. Slowly pour the cornstarch mixture into the simmering blueberries, stirring constantly.
- Continue to cook and stir for 2-3 minutes, or until the soup has thickened.
- Remove the cinnamon stick and stir in the lemon juice. Let the soup cool for a few minutes before serving.
