Ingredients

Instructions

  1. In a large pot, combine the blueberries, sugar, 2 cups of water, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 10 minutes.
  2. In a small bowl, mix the cornstarch and 1/4 cup of cold water until smooth. Slowly pour the cornstarch mixture into the simmering blueberries, stirring constantly.
  3. Continue to cook and stir for 2-3 minutes, or until the soup has thickened.
  4. Remove the cinnamon stick and stir in the lemon juice. Let the soup cool for a few minutes before serving.
