Danish Cheese Straws (Ostestænger)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 1/2 cups grated sharp cheddar cheese
  • 3-4 tablespoons cold water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, pulse the flour, salt, and cayenne pepper until combined.
  3. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  4. Add the grated cheddar cheese and pulse until the dough starts to come together.
  5. Gradually add the cold water, 1 tablespoon at a time, and pulse until the dough forms a ball.
  6. Roll out the dough on a floured surface to about 1/4 inch thickness.
  7. Cut the dough into strips about 1/2 inch wide and 4 inches long.
  8. Place the strips on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, or until the cheese straws are golden and crispy.
  10. Let the cheese straws cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
