Danish Dream Cake (Drømmekage)

Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter
- 1 cup milk
- 2 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups shredded coconut
- 1/2 cup brown sugar
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking powder, and salt; stir into the batter alternately with the milk.
- Pour the batter into the prepared baking dish and spread it out evenly.
- In a saucepan, combine the shredded coconut, brown sugar, and heavy cream. Cook over medium heat, stirring constantly, until the mixture thickens.
- Spoon the coconut mixture over the cake batter.
- Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool before serving.
