Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1 cup milk
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups shredded coconut
  • 1/2 cup brown sugar
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt; stir into the batter alternately with the milk.
  5. Pour the batter into the prepared baking dish and spread it out evenly.
  6. In a saucepan, combine the shredded coconut, brown sugar, and heavy cream. Cook over medium heat, stirring constantly, until the mixture thickens.
  7. Spoon the coconut mixture over the cake batter.
  8. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
