Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 4 large egg yolks
- 1 can sweetened condensed milk
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, pulse together the flour, butter, sugar, and salt until the mixture resembles coarse crumbs.
- Add 1 egg yolk and pulse until the dough comes together.
- Press the dough into a 9-inch tart pan, covering the bottom and sides evenly.
- Bake the crust for 15-20 minutes, or until golden brown. Let it cool.
- In a large bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and remaining 3 egg yolks until smooth.
- Pour the lemon mixture into the cooled tart crust and spread it evenly.
- Bake for 15-20 minutes, or until the filling is set.
- Let the tart cool completely before serving.
