Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup cold water
  • 1 egg, beaten (for egg wash)
  • 1/4 cup pearl sugar (for sprinkling)

Instructions

  1. In a large bowl, mix the flour, sugar, and salt together. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Add the cold water and mix until the dough comes together. Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. Roll out the chilled dough on a floured surface to about 1/4 inch thick. Cut the dough into 12 equal rectangles.
  5. Make a diagonal cut from each corner of the rectangles towards the center, leaving a small space in the middle uncut. Fold every other corner towards the center to create a pinwheel shape.
  6. Place the pastries on the prepared baking sheet. Brush each pastry with the beaten egg and sprinkle with pearl sugar.
  7. Bake for 12-15 minutes or until the pastries are golden brown. Let them cool on a wire rack before serving.
