Danish Pickled Beets (Syltede Rødbeder)

Ingredients

  • 4 medium beets, peeled and sliced
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 teaspoon salt

Instructions

  1. In a saucepan, combine the apple cider vinegar, water, sugar, and salt. Bring to a boil, stirring to dissolve the sugar and salt.
  2. Add the sliced beets to the boiling liquid and reduce the heat to low. Simmer for 10 minutes, or until the beets are tender.
  3. Remove the saucepan from the heat and let the beets cool in the liquid.
  4. Once cooled, transfer the beets and liquid to a sterilized jar and refrigerate for at least 24 hours before serving.
