Danish Pickled Beets (Syltede Rødbeder)
Syltede Rødbeder, or Danish Pickled Beets, are a traditional and popular dish in Danish cuisine. The sweet and tangy flavor of pickled beets makes them a versatile side dish or topping for salads and sandwiches.
Ingredients
- 4 medium beets, peeled and sliced
- 1 cup apple cider vinegar
- 1 cup water
- 1/2 cup granulated sugar
- 1 teaspoon salt
Instructions
- In a saucepan, combine the apple cider vinegar, water, sugar, and salt. Bring to a boil, stirring to dissolve the sugar and salt.
- Add the sliced beets to the boiling liquid and reduce the heat to low. Simmer for 10 minutes, or until the beets are tender.
- Remove the saucepan from the heat and let the beets cool in the liquid.
- Once cooled, transfer the beets and liquid to a sterilized jar and refrigerate for at least 24 hours before serving.
