Danish Pork Roast (Stegt Flæsk)

Ingredients

  • 1 lb pork belly
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 lb potatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp flour
  • 2 tbsp butter
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F.
  2. Score the pork belly skin and rub with salt and pepper.
  3. Place the pork belly on a rack in a roasting pan and roast for 20 minutes until crispy.
  4. Boil the potatoes in a pot of salted water until tender.
  5. In a separate saucepan, heat the chicken broth and cream. In a small bowl, mix the flour with a little water to make a slurry, then whisk it into the broth and cream mixture to thicken.
  6. Stir in the butter and parsley, and season with salt and pepper.
  7. Serve the crispy pork belly with the boiled potatoes and parsley sauce.
