Danube Fish Soup (Dunavska Riblja Čorba)
Dunavska Riblja Čorba, or Danube Fish Soup, is a traditional Serbian dish that is rich in flavor and a perfect representation of the country's cuisine.
Ingredients
- 1 kg mixed fish (carp, catfish, perch), cleaned and cut into chunks
- 2 onions, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 1/4 cup vegetable oil
- 2 bay leaves
- 1 tsp paprika
- 1/2 cup white wine
- 6 cups fish or vegetable broth
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, carrots, and celery, and sauté until the vegetables are soft.
- Add the garlic, tomatoes, and red bell pepper, and cook for another 5 minutes.
- Stir in the paprika and bay leaves, then pour in the white wine. Let it simmer for a few minutes until the alcohol evaporates.
- Add the fish chunks to the pot, then pour in the fish or vegetable broth. Season with salt and pepper.
- Cover the pot and let the soup simmer for about 30-40 minutes, or until the fish is cooked through.
- Remove the bay leaves and adjust the seasoning if needed. Serve the soup hot, garnished with chopped fresh parsley.
