Ingredients

  • 2 large eggplants, sliced
  • 1 onion, finely chopped

  • 1 red chili, sliced

  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 tablespoon vegetable oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the chopped onion, minced garlic, and sliced red chili. Sauté until the onions are translucent.
  3. Add the turmeric, cumin, and coriander powder. Stir well to combine.

  5. Cover the pan and cook for 15-20 minutes, or until the eggplants are tender, stirring occasionally.
  6. Season with salt to taste.
