Ingredients
- 2 large eggplants, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red chili, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 tablespoon vegetable oil
- Salt to taste
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the chopped onion, minced garlic, and sliced red chili. Sauté until the onions are translucent.
- Add the turmeric, cumin, and coriander powder. Stir well to combine.
- Add the sliced eggplants to the pan and stir to coat them with the spice mixture.
- Cover the pan and cook for 15-20 minutes, or until the eggplants are tender, stirring occasionally.
- Season with salt to taste.
- Remove from heat and transfer to a serving dish.
