Ingredients
- 2 large ripe tomatoes, diced
- 1 small red onion, thinly sliced
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted and chopped
- 4 oz feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- Salt and pepper to taste
- 8-10 pieces of barley rusks or whole grain rye crispbread
Instructions
- In a large bowl, combine the tomatoes, red onion, cucumber, and olives.
- Add the crumbled feta cheese and toss gently to combine.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
