Delectable Hyderabadi Mutton Biryani
Hyderabadi Mutton Biryani is a classic dish from the royal city of Hyderabad, known for its rich and aromatic flavors. This delectable biryani is a perfect blend of marinated mutton, fragrant basmati rice, and a medley of spices, creating a truly indulgent experience for your taste buds.
Ingredients
- 500g mutton, cut into pieces
- 3 cups basmati rice, soaked
- 1 cup yogurt
- 2 onions, thinly sliced and fried until golden
- 4 tomatoes, chopped
- 1/4 cup fresh mint leaves
- 1/4 cup fresh coriander leaves
- 1/2 cup ghee
- Whole spices: bay leaves, cinnamon, cardamom, cloves
- 1/2 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp biryani masala
- Salt to taste
- Saffron strands soaked in milk
Instructions
- In a bowl, marinate the mutton with yogurt, turmeric powder, red chili powder, biryani masala, half of the fried onions, mint leaves, coriander leaves, and salt. Let it marinate for 2 hours.
- Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
- Add the marinated mutton and cook until the meat is tender and the ghee separates.
- In a separate pot, boil water and cook the soaked rice until 70% done. Drain the rice.
- Layer the partially cooked rice over the mutton in the pot. Sprinkle the remaining fried onions and pour the saffron-infused milk on top.
- Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and the flavors are infused.
- Gently mix the layers before serving.
