Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup water
- 1 pound ground beef
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup green olives, sliced
- 1/4 cup raisins
- 2 hard-boiled eggs, chopped
- Vegetable oil for frying
Instructions
- In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the water, tossing with a fork until a dough forms. Divide the dough into 12 equal pieces and shape each piece into a ball. Cover and let rest for 30 minutes.
- In a skillet, cook the ground beef, onion, and bell pepper over medium heat until the beef is no longer pink. Add the tomatoes, garlic, cumin, paprika, salt, and pepper. Cook for 5 minutes, then stir in the olives, raisins, and hard-boiled eggs. Remove from heat and let the filling cool.
- On a lightly floured surface, roll out each dough ball into a 6-inch circle. Place a spoonful of the beef filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and press the edges to seal.
- In a deep skillet, heat the vegetable oil over medium-high heat. Fry the empanadas in batches until golden brown on both sides. Drain on paper towels.
