Ingredients

  • 1 lb lamb, cut into chunks
  • 2 onions, sliced
  • 3 tomatoes, diced
  • 2 bell peppers, sliced
  • 4 potatoes, peeled and sliced
  • 1/4 cup olive oil
  • 1/2 cup water
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, brown the lamb chunks in olive oil over medium heat.
  3. Add the onions, tomatoes, and bell peppers to the skillet and cook for 5 minutes.
  4. Layer the sliced potatoes in a baking dish and season with salt and pepper.
  5. Transfer the lamb and vegetable mixture on top of the potatoes.
  6. Pour water over the mixture, cover the baking dish with foil, and bake for 1.5 hours.
  7. Remove the foil and bake for an additional 30 minutes until the potatoes are golden brown.
