Ingredients
- 1 3/4 cups almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites, room temperature
- 1/4 cup granulated sugar
- 1/2 teaspoon almond extract
- 1 cup diced ripe mango
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large bowl, sift together the almond flour and powdered sugar.
- In a separate bowl, beat the egg whites until foamy, then gradually add the granulated sugar while continuing to beat until stiff, glossy peaks form.
- Gently fold the almond flour mixture into the egg whites, then add the almond extract and continue to fold until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheet.
- Let the macarons sit at room temperature for 30 minutes to form a skin, then bake for 15 minutes until set.
- While the macarons are cooling, make the mango filling by combining the diced mango, sugar, and lemon juice in a saucepan over medium heat. Cook until the mango is soft and the mixture has thickened, then let it cool.
- Once the macarons are cool, spread a small amount of the mango filling on the flat side of half of the macarons, then sandwich with the remaining macarons.
- Store the macarons in an airtight container in the refrigerator for up to 3 days.
