Ingredients

  • 1 3/4 cups almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites, room temperature

  • 1 cup diced ripe mango
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, sift together the almond flour and powdered sugar.
  3. In a separate bowl, beat the egg whites until foamy, then gradually add the granulated sugar while continuing to beat until stiff, glossy peaks form.
  4. Gently fold the almond flour mixture into the egg whites, then add the almond extract and continue to fold until the batter is smooth and shiny.
  5. Transfer the batter to a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheet.
