Ingredients

  • 200g foie gras
  • 4 scallops
  • 1 truffle
  • 100ml truffle oil
  • 200ml chicken stock
  • 50g butter
  • Salt and pepper to taste

Instructions

  1. Prepare the foie gras by removing any membranes and slicing it into 4 equal portions.
  2. Clean the scallops and season with salt and pepper.
  3. Thinly slice the truffle and set aside.
  4. In a pan, heat the truffle oil over medium heat and sear the foie gras until golden brown on both sides. Remove from the pan and set aside.
  5. In the same pan, sear the scallops for 2-3 minutes on each side until golden brown. Remove from the pan and set aside.
  6. Deglaze the pan with chicken stock and reduce by half. Whisk in the butter to create a rich sauce.
  7. Arrange the foie gras and scallops on serving plates, drizzle with the truffle sauce, and garnish with the sliced truffle.
