Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 6 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine the granulated sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar is completely dissolved and turns into a golden caramel. Pour the caramel into a 9-inch round cake pan, tilting the pan to evenly coat the bottom. Set aside to cool.
  2. Preheat the oven to 350°F (175°C).
  3. In a blender, combine the eggs, sweetened condensed milk, evaporated milk, and vanilla extract. Blend until smooth.
  4. Pour the mixture over the cooled caramel in the cake pan.
  5. Cover the cake pan with aluminum foil and place it in a larger baking dish. Fill the larger dish with hot water until it reaches halfway up the sides of the cake pan.
  6. Bake in the preheated oven for 1 hour, or until the center is set.
  7. Remove the cake pan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight.
  8. To serve, run a knife around the edge of the cake pan and invert the quesillo onto a serving plate. The caramel will flow over the top, creating a beautiful glaze.
