Ingredients
- 4 green plantains
- 1 cup of vegetable oil
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced

Instructions
- Peel the green plantains and cut them into 1-inch slices.
- Heat the vegetable oil in a large skillet over medium heat.
- Fry the plantain slices until golden brown, then remove them from the skillet and flatten them with a plantain press or the back of a heavy plate.
- In the same skillet, sauté the onion, tomatoes, and garlic until soft.
- Add the cumin, salt, and pepper, and mix well.
- Place the flattened plantains back into the skillet, covering them with the sautéed vegetables.
- Cook for an additional 5 minutes, then serve hot.
