Ingredients

  • 4 green plantains
  • 1 cup of vegetable oil

  • Salt and pepper to taste

Instructions

  1. Peel the green plantains and cut them into 1-inch slices.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Fry the plantain slices until golden brown, then remove them from the skillet and flatten them with a plantain press or the back of a heavy plate.
  4. In the same skillet, sauté the onion, tomatoes, and garlic until soft.
  5. Add the cumin, salt, and pepper, and mix well.
  6. Place the flattened plantains back into the skillet, covering them with the sautéed vegetables.
  7. Cook for an additional 5 minutes, then serve hot.
