Delicious Jarkop (Жаркоп)

Ingredients

  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 cup green peas
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cups beef or vegetable broth
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the lamb and cook until browned on all sides.
  2. Add the onions and garlic to the pot and cook until softened.
  3. Stir in the cumin, paprika, salt, and black pepper.
  4. Add the carrots, potatoes, and tomatoes to the pot. Pour in the broth and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the lamb is tender.
  6. Add the green peas to the pot and cook for an additional 5 minutes.
  7. Remove from heat and let the Jarkop rest for a few minutes before serving.
