Delicious Jarkop (Жаркоп)
Жаркоп (Delicious Jarkop) is a traditional Kyrgyz dish that is hearty, flavorful, and perfect for a comforting meal. This dish is a staple in Kyrgyz cuisine and is loved for its rich taste and satisfying ingredients.
Ingredients
- 500g lamb, cut into cubes
- 2 onions, finely chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 1 cup green peas
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 3 cups beef or vegetable broth
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb and cook until browned on all sides.
- Add the onions and garlic to the pot and cook until softened.
- Stir in the cumin, paprika, salt, and black pepper.
- Add the carrots, potatoes, and tomatoes to the pot. Pour in the broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the lamb is tender.
- Add the green peas to the pot and cook for an additional 5 minutes.
- Remove from heat and let the Jarkop rest for a few minutes before serving.
