Delicious Yennegai Palya (Stuffed Eggplant Stir-Fry)

Ingredients

  • 4 small eggplants
  • 1 cup grated coconut
  • 1/2 cup roasted peanuts
  • 2 tbsp sesame seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 1 tbsp jaggery
  • 2 tbsp tamarind paste
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. Wash and slit the eggplants lengthwise without cutting them into two pieces.
  2. Grind the grated coconut, roasted peanuts, sesame seeds, turmeric powder, red chili powder, coriander powder, cumin seeds, jaggery, and tamarind paste to make the stuffing.
  3. Stuff the ground mixture into the slit eggplants.
  4. Heat oil in a pan and place the stuffed eggplants in it.
  5. Cover and cook on low heat until the eggplants are tender.
  6. Stir occasionally to ensure even cooking.
  7. Once the eggplants are cooked, remove from heat and serve hot.
