Delicious Yennegai Palya (Stuffed Eggplant Stir-Fry)

Ingredients
- 4 small eggplants
- 1 cup grated coconut
- 1/2 cup roasted peanuts
- 2 tbsp sesame seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin seeds
- 1 tbsp jaggery
- 2 tbsp tamarind paste
- 2 tbsp oil
- Salt to taste
Instructions
- Wash and slit the eggplants lengthwise without cutting them into two pieces.
- Grind the grated coconut, roasted peanuts, sesame seeds, turmeric powder, red chili powder, coriander powder, cumin seeds, jaggery, and tamarind paste to make the stuffing.
- Stuff the ground mixture into the slit eggplants.
- Heat oil in a pan and place the stuffed eggplants in it.
- Cover and cook on low heat until the eggplants are tender.
- Stir occasionally to ensure even cooking.
- Once the eggplants are cooked, remove from heat and serve hot.
