Ingredients

  • 2 cups basmati rice, washed and soaked
  • 3 tablespoons ghee
  • 1 teaspoon cumin seeds
  • 2 green chilies, slit
  • 1 onion, thinly sliced
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 cup mixed vegetables (carrots, peas, beans)
  • 4 cups water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a large pot, heat ghee over medium heat. Add cumin seeds and let them splutter.
  2. Add green chilies and sliced onion. Sauté until the onions turn golden brown.
  3. Stir in ginger-garlic paste, turmeric powder, and red chili powder. Cook for 2 minutes.
  4. Add the mixed vegetables and cook for another 3-4 minutes.
  5. Drain the soaked rice and add it to the pot. Sauté for 2 minutes.
  6. Pour in the water, add salt, and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  7. Garnish with fresh coriander leaves and serve hot.
