Ingredients

  • 4 cups granulated sugar
  • 4 cups water
  • 1 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons cream of tartar
  • 1 1/2 teaspoons rose water
  • 1 cup chopped pistachios or almonds (optional)
  • 1/2 cup powdered sugar, for coating

Instructions

  1. In a large saucepan, combine the sugar and 2 cups of water. Stir over medium heat until the sugar dissolves.
  2. In a separate bowl, mix the cornstarch with the remaining 2 cups of water until smooth.
  3. Gradually pour the cornstarch mixture into the saucepan, stirring constantly.
  4. Add the lemon juice and cream of tartar to the mixture.
  5. Cook the mixture over medium heat, stirring frequently, until it thickens and turns a light golden color (about 1 hour).
  6. Remove from heat and stir in the rose water and chopped nuts, if using.
  7. Pour the mixture into a greased 9x9 inch pan and smooth the top. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Once set, cut the Turkish Delight into small squares and toss them in powdered sugar to coat.
  9. Store the Turkish Delight in an airtight container, layered between sheets of wax paper, in a cool, dry place.
