Demos Chicken And Rice Soup

Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup long-grain white rice
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté the chicken pieces until browned. Remove and set aside.
- In the same pot, sauté the onion, carrots, and celery until softened. Add the garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a boil. Add the rice, thyme, and the reserved chicken. Reduce heat, cover, and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Season with salt and pepper to taste. Serve hot and enjoy!
