Ingredients

  • 1 lb beef, thinly sliced
  • 2 cups coconut milk
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, sliced
  • 2 tomatoes, diced
  • 1 lemongrass stalk, bruised
  • 2 kaffir lime leaves
  • 1 tsp tamarind paste
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. In a pot, combine coconut milk, shallots, garlic, red chilies, tomatoes, lemongrass, and kaffir lime leaves. Bring to a simmer over medium heat.
  2. Add the thinly sliced beef to the pot and let it simmer for 1.5 hours, stirring occasionally.
  3. Stir in tamarind paste, sugar, and salt. Continue to simmer for another 30 minutes until the beef is tender and the sauce has thickened.
  4. Remove the lemongrass and kaffir lime leaves before serving.
