Ingredients
- 1 lb salted codfish, soaked and flaked
- 1 can ackee, drained
- 1 onion, chopped
- 1 bell pepper, diced
- 2 tomatoes, chopped

- 2 scallions, chopped
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the onion, bell pepper, tomatoes, garlic, thyme, and scallions. Sauté until the vegetables are tender.
- Add the flaked saltfish to the skillet and cook for 5 minutes, stirring occasionally.
- Gently fold in the ackee and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
