Designer Stew (ayamase Delicacy)
Designer Stew, also known as Ayamase, is a popular delicacy in Nigerian cuisine. This spicy and flavorful stew is made with a unique blend of green bell peppers, scotch bonnet peppers, and assorted meats, creating a rich and aromatic dish that is perfect for special occasions and gatherings.
Ingredients
- 2 lbs assorted meats (beef, tripe, and cow foot)
- 4 large green bell peppers
- 6 scotch bonnet peppers
- 2 onions
- 1 cup palm oil
- 3 tbsp crayfish
- 3 tbsp locust beans (iru)
- 2 tbsp ground crayfish
- 1 tsp salt
- 1 seasoning cube
- 2 cups beef stock
Instructions
- Prepare the assorted meats by washing and cutting them into bite-sized pieces.
- In a blender, combine the green bell peppers, scotch bonnet peppers, and one onion. Blend until smooth.
- Heat the palm oil in a large pot, then add the remaining onion (chopped) and sauté until translucent.
- Add the blended pepper mixture to the pot and cook for about 10 minutes, stirring occasionally.
- Stir in the crayfish, locust beans, ground crayfish, salt, and seasoning cube. Cook for another 10 minutes.
- Add the assorted meats and beef stock to the pot. Cover and simmer for 40-45 minutes, or until the meats are tender and the stew has thickened.
- Adjust the seasoning if necessary, and serve the Designer Stew hot with rice or your preferred side dish.
