Dhal Bhat (tibetan Style Lentil Soup)

Ingredients

  • 2 cups red lentils
  • 4 cups water
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tomato, diced
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils thoroughly and drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the diced tomatoes and cook until they are soft.
  4. Stir in the turmeric, cumin powder, coriander powder, and red chili powder. Cook for 2 minutes.
  5. Add the rinsed lentils to the pot and stir to combine with the spices and vegetables.
  6. Pour in the water and season with salt. Bring to a boil, then reduce the heat and let the soup simmer for 30 minutes, or until the lentils are soft and fully cooked.
  7. Once the lentils are cooked, adjust the seasoning if needed.
  8. Garnish with fresh cilantro before serving.
