Dhansak Delight (धनसाक)

Ingredients

  • 1 cup red lentils
  • 1 cup mixed vegetables (potatoes, carrots, eggplant)
  • 1 lb boneless lamb, cut into cubes
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1/2 cup chopped fresh coriander
  • 2 tbsp dhansak masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 4 cups water
  • Salt to taste

Instructions

  1. Wash the red lentils and soak them in water for 30 minutes.
  2. Heat oil in a large pot and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add the minced garlic and grated ginger, and sauté for a few minutes.
  4. Add the lamb cubes and cook until they are browned on all sides.
  5. Stir in the dhansak masala and turmeric powder, and cook for 2-3 minutes.
  6. Add the soaked lentils, mixed vegetables, chopped tomatoes, and water. Season with salt and bring to a boil.
  7. Reduce the heat, cover the pot, and simmer for 45-50 minutes or until the lamb is tender and the lentils are cooked.
  8. Garnish with chopped coriander and serve hot with steamed rice.
